Melt-in-the-mouth tomatoes and courgettes with Granaline organic pomegranate concentrate and burrata

The arrival of fine weather and the month of June herald the return of tomatoes, courgettes and other summer vegetables! That's why we've come up with a recipe that's rich in vitamins and nutrients and makes the most of these vegetables! Juicy tomatoes and melting courgettes cooked with Granaline organic pomegranate concentrate. A real treat for the taste buds!

Tomatoes contain potassium and lycopene. Lycopene is a powerful antioxidant and gives tomatoes their lovely red colour. Courgettes also contain carotenoids, vitamin C and rutin (a phenolic compound in the flavonoid family).

In the kitchen!


2 large tomatoes

1 courgette

4 tbsp Granaline organic pomegranate concentrate

1 clove garlic, finely chopped

1 burrata cheese

A few basil leaves

A handful of pomegranate seeds for the topping

Olive oil

Salt and pepper


  1. Wash and chop the courgette. Heat 1 tbsp olive oil in a frying pan. Cook the courgette, keeping it crunchy to retain all its nutrients. At the end of cooking, add 1 finely chopped garlic clove and 2 tbsp Granaline Organic pomegranate concentrate.

  2. Wash and chop your tomatoes. In a salad bowl, mix 1 tablespoon of premium olive oil with 2 tablespoons of Granaline Organic pomegranate molasses (concentrate). Add the tomatoes. Mix well. Add the courgettes and salt and pepper to taste. Add a few chopped basil leaves, a few pomegranate seeds and the burrata on top, and you're done! You can also add a few seeds from a mix for flavour and texture.

  3. Enjoy immediately with a piece of seeded bread. Bon appétit and happy Wednesday!
